This programme aims to impart advanced skills and higher knowledge to individuals who have a foundation in pastry and baking. These individuals also aspire to attain an advanced qualification in pastry and baking and considering pursuing a career in this sector. During the course of study, learners will acquire procedural knowledge through theory and demonstrations and then apply the lesson learned in practical classes guided by skilled trainers in the relevant fields.

To achieve a full qualification, learners must successfully attain competency in all the following modules:-

• Food Safety Course Level 3
• Maintain Inventories
• Prepare Advanced Cakes
• Make Puff Pastry Products
• Make Choux Pastries
• Make Yeast-reised Pastries
• Facilitate Effective Communication and Engagement at the Workplace

(The module runs are not based on above sequence. ACI reserves the rights to make amendment or changes to the sequence of the module runs).

Notes:

1. A non-refundable Admission Fee of $50.00 is payable upon submission of application. 
2. Trainees are required to purchase a starter kit which includes the uniform, safety boots and tools set. 
3. All applicants are required to attend a preview session before being accepted into the course. This will be done prior to course commencement date. 
4. Admission is subject to submission of the required supporting documents and the minimum headcount to start a class.

Union Training Assistance Programme (UTAP) 

• NTUC members enjoy 50% unfunded course fee support for up to $250 each year (or up to $500 for NTUC members aged 40 years old and above) when you sign up for courses supported under UTAP (Union Training Assistance Programme). Target Audiences:

• Junior Pastry Chefs or Head Baker and new supervisors in the F&B sectors
• For individuals who wish to upgrade one’s skills and knowledge to obtain an industry recognised certification 

Entry Requirements:

• Completed WSQ - Advanced Certificate in Food Services (Pastry & Baking) with ACI
• Education : Minimum Lower Secondary education and above, WPLN level 4 or equivalent

Language : Basic Proficiency in Written and Spoken English
