This programme is targeted at junior chefs who wish to enhance their knowledge and gain a deeper understanding of the origins and the uniqueness of different Asian cuisines including utilization of different ingredients and different cooking styles used in Asian cuisines. It also equips participants with staff and supervisory skills.

 
 

1. Food Safety Course Level 3 (PWM) – This course aims to equip learners in food establishments with the necessary knowledge and skills to conduct internal food safety and hygiene checks. Learners will gain insight into food safety programs such as HACCP (Hazard Analysis Critical Control Points) and be able to propose corrective actions for any food safety and hygiene lapses identified during audits.

2. Maintain Inventories
– This course aims to impart knowledge to learners on managing delivered goods, dispatch and storage of products and supplies to monitor the purchase of stocks for production effectively. Learners will also learn to implement and monitor stocktaking procedures, interpret inventory information, and investigate and document missing or damaged stocks in accordance with organisational stock control procedures.

3. Prepare Advanced Chinese Dry Heat Cooked Dishes – This course provides learners with the essential skills to master both traditional and contemporary Chinese dry-heat cooking techniques. Through practical experience, they will expand their understanding of Chinese ingredients, spices, and seasonings while learning key methods for dry-heat cooking. Additionally, learners will refine their plating skills, ensuring their dishes are visually stunning and full of flavor.

4. Prepare Advanced Chinese Moist Heat Cooked Dishes – This course provides learners with the essential skills to master both traditional and contemporary Chinese moist-heat cooking techniques. Through practical experience, they will expand their understanding of Chinese ingredients, spices, and seasonings while learning key methods for moist-heat cooking. Additionally, learners will refine their plating skills, ensuring their dishes are visually stunning and full of flavor.

5. Demonstrate Sous Vide Method – This course provides learners with the opportunity to gain a comprehensive understanding of the modern Western moist-heat cooking method – sous vide. They will learn how to utilize sous vide techniques to create flavorful dishes, as well as how to plate these dishes with finesse and style.

6. Prepare Singapore Heritage Cuisine – This course is designed to provide learners with the essential knowledge and skills to prepare and execute Singapore Heritage specialty cuisine dishes. The course will cover factors that influence the culture of the dishes and the key characteristics of the dishes. Learners will have hands-on practice to prepare the various dishes while mastering techniques for yield test, ingredient substitution, and plating presentation.(The module runs are not based on above sequence.

Entry Requirements:

  • ACI does not accept trainees under 16 years of age. 
  • Completed: WSQ - Higher Certificate in Food Services (Culinary Arts) 
  • Education : Minimum Lower Secondary education and above, WPLN level 4 or equivalent 
  • Language : Basic Proficiency in Written and Spoken English
  • All applicants are required to attend a preview session before being accepted into the course. This will be done prior to course commencement date.
  • Admission is subject to submission of the required supporting documents and the minimum headcount to start a class.
  • Trainees are required to purchase a starter kit which includes the uniform, safety boots and tools set.
  • There will be theory and practical assessments for all WSQ courses.
  • Trainees are required to clean up kitchen after class.

All our courses are full days and requires standing in the kitchen the entire time. 

Please note that our kitchens are designed to accommodate 24 Trainees with 3 Trainees sharing one work-station.

Please take note of the following on the eligibility of the funding: 

  • Trainees must attain a minimum attendance of 75% per module for the whole programme; and
  • Attempt all assessment(s) and be certified competent 

Failing which the trainee will be liable to forfeit the grant and bear the full course fees.

^The date of withdrawal will be based on the date the request for withdrawal is lodged by the trainee.

By accepting our offer within the stipulated deadline, you confirm your intention to enrol in the course. Please be aware that upon acceptance of offer, you are liable to pay the course fee as detailed in the invoice.  

SkillsFuture Singapore (SSG) mandates the use of electronic attendance marking through Singpass. Please ensure that your mobile phone has a working camera and an active data plan, Singpass app is installed and accessible to your account. If you are unable to scan your e-attendance electronically with your device, you shall be required to pay the full module fee using alternative payment methods. 

ACI offer career advisory and employment assistance to help trainees in their job search within relevant F&B industry or job roles.  However, there is no guarantee of a job placement, and trainees need to be open to the available job opportunities.   If you’re considering a career transition, SCTP could be a valuable resource for enhancing your skills and exploring new employment prospects! 

Absent with valid reason

For Leave of Absence (LOA) with valid reason accompanied by documentary proof, an appeal can be submitted for management approval, seeking to be transferred to the next class.  This appeal must be submitted within two (02) working days from the missed class date, and is subject to ACI's management approval.

For LOA approved in 2024, trainees must complete the course within four (04) months from missed class or by 31 December 2024, whichever is earlier. From 2025, replacement classes are only available in WSQ or SkillsFuture Only Pathway courses, with any fee difference paid by the trainee (no refunds). For SkillsFuture Only Pathway, trainees can use SkillsFuture Credit, but no course fee grant applies.

Paid course fee will be forfeited for valid reason appeals not submitted within two (02) working days. Initial claims for the payable course fee from SkillsFuture Credit (SFC) or Post-Secondary Education Account (PSEA) cannot be processed and trainee will be liable to pay for this amount of payable course fee with other payment methods. Please note that STEP system will not allow trainee to apply for further courses until this amount is paid.

For courses that are more than 1 day, trainee will not be allowed to attend remaining sessions if trainee missed Day 1 of class. 

Appeals to transfer to the next class must be submitted within two (02) working days with proof to info@aci.edu.sg, subject to ACI's management approval. Failure to do so will forfeit paid fees and ineligible for SkillsFuture Credit or PSEA claims. Unpaid fees must be settled before enrolling in future courses.

For courses that are 2 days or more, trainee will not be allowed to attend remaining sessions if trainee missed Day 1 of class. 

Absent without valid reason

Trainees absent without a valid reason will forfeit the course fee, cannot attend remaining sessions, and are liable for the course fee. SkillsFuture Credit or PSEA claims will not be processed. Unpaid fees must be cleared before future enrollments.

ACI reserves the right to reject leave requests unrelated to the course (e.g. internet service disruption does not affect kitchen classes in person).

因正当理由缺席

对于因正当理由缺席(LOA)并附有文件证明的人员,可以提出上诉以获得管理层批准,寻求转入下一堂课。此上诉必须在缺课日期后两个(02)个工作日内提交,并须经 ACI 管理层批准。

 对于 2024 年批准的 LOA,学员必须在缺课后四个(04)个月内或 2024 年 12 月 31 日(以较早时间为准)完成课程。从 2025 年起,替代课程仅在 WSQ 或 SkillsFuture Only Pathway 课程中提供,任何费用差额由学员支付(不退款)。对于 SkillsFuture Only Pathway,学员可以使用 SkillsFuture 学分,但不适用课程费用补助。

如果未在两个(02)个工作日内提交正当理由申请转课,已支付的课程费用将被没收。无法处理技能未来学分 (SFC) 或高等教育账户 (PSEA) 的应付课程费用的初始申请,学员将有责任通过其他付款方式支付这笔应付课程费用。请注意,在支付此金额之前,STEP 系统不允许学员申请新的课程。

对于超过 1 天的课程,如果学员缺席了第一天的课程,则不允许学员参加剩余的课程。

转课申请必须在两个 (02) 个工作日内提交,并附上证据,发送至 info@aci.edu.sg,须经 ACI 管理层批准。否则,将没收已支付的费用,并且没有资格获得技能未来学分或 PSEA 的申请。未付费用必须在报名参加未来课程之前结清。

对于 2 天或更长时间的课程,如果学员缺席了第一天的课程,则不允许学员参加剩余的课程。

无正当理由缺席

无正当理由缺席的学员将被没收课程费用,不能参加剩余课程,并承担课程费用。SkillsFuture 学分或 PSEA 申请将不予受理。未付费用必须在将来报名前结清。

ACI 保留拒绝与课程无关的休假请求的权利(例如,互联网服务中断不会影响亲自参加厨房课程)。
