This 1-day class aims to provide learners with the basic techniques of making an all-time childhood favourite with a twist - Ang Ku Kueh that looks like Pineapples and Fishes, great for auspicious occasions to bring in good tidings.

You will also make the traditional version of Ang Ku Kueh and Sesame Balls, also known as Jain Dui.

This is a hands-on class makes all dough and fillings from scratch and uses natural food colouring.

这个为期一天的课程旨在为学习者提供基本的技巧,让他们在童年时期最喜爱的食物是一个看似凤梨和鱼的扭转红龟粿,非常适合在吉祥的日子里带来好消息。

你也会做传统版本的红龟粿和 芝麻球,又名煎堆。

这是一门手工制作面团和馅料的课程,使用天然食品着色。

Learn the basic techniques of making an all-time childhood favourite with a twist - Ang Ku Kueh that looks like Pineapples and Fishes, plus the traditional version of Ang Ku Kueh and Sesame Balls.

This module is designed to provide learners with the basic techniques of kueh and filling making. You will also have insights to the ingredients and tools specific to kueh making, as well as a good understanding on how these kueh is being prepared with hands on practice.

1)       Character Ang Ku Kueh - Learn to shape pineapple and fish Ang Ku Kueh using natural food colouring such as orange, sweet potatoes, matcha powder and red dragon fruit. Usher in good tidings with these auspicious Pineapple and Fish characters in additional to Traditional Ang Ku Kueh.

2)       Traditional Ang Ku Kueh - Learn to make mung bean paste and peanut filling from scratch and encase these with AKK dough using natural food colouring and traditional tortoise-shaped Ang Ku Kueh moulds.

3)       Sesame Ball, also known as Jian Dui - Learn to make sesame ball dough from sweet potatoes and its red bean filling from scratch. Pick up techniques to shape and turn them into crispy chewy balls deep fried with sesame coating.

You will bring home an assortment of Ang Ku Kueh (Character & Traditional combined), and Sesame Balls.

本模块旨在为学习者提供基本的红龟粿和填充制作技术。您也将有机会了解制作红龟粿所需的材料和工具,并深入了解手工制作红龟粿的过程。    

1)个字符红龟粿 – 学习使用天然食品色素如橘子、红薯、抹茶粉和火龙果来塑造菠萝和鱼儿的形状。除了传统的红龟粿,这些吉祥的凤梨和鱼儿也带来喜讯。    

2)传统红龟粿 – 学习制作绿豆沙和花生馅料,并使用天然食品着色和传统的鱼叉状模具将其包裹在面团中。

3)芝麻球,又名煎堆   -   学做芝麻球红薯面团 和红豆馅料。捡起技术塑造,并把它们变成酥脆的咀嚼球,用芝麻涂层油炸。    

 您将带回红龟粿 和芝麻球与家人品尝。

Trainees are required to clean up kitchen after class.

All our courses are full days and requires standing in the kitchen the entire time.

Please note that our kitchens are designed to accommodate 24 Trainees with 3 Trainees sharing one work-station. With relaxation of Covid measures, we have reverted to conducting classes at full capacity of 24 pax. 请注意本学院的厨房可容纳 24 名学员。其中 3 名学员共用一个工作站。随着 Covid-19 措施的放松,本学院已恢复为 24 名学员上课。

REFUND POLICY FOR WITHDRAWAL

Refund Policy

Withdrawal 14 days or more before course starts.

100% refund of paid fees

Withdraw from course less than 14 days before course starts.

50% refund of paid fees

Withdrawal on or after course starts.

No refund of paid fees

^The date of withdrawal will be based on the date the request for withdrawal is lodged by the trainee.

Absent with valid reason

For leave of absence with valid reason accompanied by documentary proof, an appeal can be submitted for management approval, seeking to be transferred to the next class.  This appeal must be submitted within two (02) working days from the missed class date, and is subject to ACI's management approval.

Paid course fee will be forfeited for valid reason appeals not submitted within two (02) working days. Initial claims for the payable course fee from SkillsFuture Credit (SFC) or Post-Secondary Education Account (PSEA) cannot be processed and trainee will be liable to pay for this amount of payable course fee with other payment methods. Please note that STEP system will not allow trainee to apply for further courses until this amount is paid.

For courses that are more than 1 day, trainee will not be allowed to attend remaining sessions if trainee missed Day 1 of class. 

Absent without valid reason

Trainee who are absent WITHOUT valid reason will have the paid course fee forfeited and not allowed to attend day 2 and 3 of the course (if any). Initial claims for the payable course fee from SkillsFuture Credit (SFC) or Post-Secondary Education Account (PSEA) cannot be processed and trainee will be liable to pay for this amount of payable course fee with other payment modes. Please note that STEP system will not allow trainee to apply for further courses until this amount is paid.

ACI reserves the right to assess/reject Leave of Absence reasons that are not relevant to the course missed (e.g. internet service disruption does not affect kitchen classes in person).
