Upon completion of this course, learners will attain knowledge and application skills in making advanced Dim Sum dishes. Learners will also possess the ability to understand types and uses of tools and equipment used for preparing advanced dim sum dishes as well as the quality indicators for the ingredients used for preparing advanced Dim Sum dishes.


This is an advanced course for learners to be equipped with knowledge and skills in preparing and producing a variety of Dim Sum doughs required for preparing Dim Sum dishes. Learners will also be taught to prepare components, stuffing and fillings, besides how to apply Chinese culinary techniques and methods to cook advanced Dim Sum dishes. Methods of cooking includes deep frying, baked and stir-frying.

During this course, experienced Dim Sum chefs will impart the principles of making advanced Dim Sum dishes including techniques such as selecting and proportioning Dim Sum ingredients, cutting, slicing, marinating, flavouring and insert Dim Sum fillings. Learners will also be trained on how to control cooking temperature, determine doneness, plating techniques and appropriate storage for Dim Sum delicacies.

Practical hands-on culinary skills to prepare some dishes such as:

  • Chicken feet in Spicy bean sauce
  • Pan-fried Dumpling
  • Taro Puff
  • Char Siew Soh
  • Steamed Lava Custard Bun
  • Steamed Prawn Dumpling

  • Trainees are required to clean up after class. 完课后,学员必须清理厨房。
  • Attendance is required for all programmes (WSQ and non WSQ Courses). 所有课程(WSQ 和非 WSQ 课程)都需要出席。
  • There will be written and practical assessments for all WSQ Courses. 所有 WSQ 课程都将进行书面和实践评估。

Please note that our kitchens are designed to accommodate 24 Trainees with 3 Trainees sharing one work-station. With relaxation of Covid measures, we have reverted to conducting classes at full capacity of 24 pax.

  • Strictly no refund allowed.
  • Only on very exceptional cases and with valid reason* (subject to management approval), we will refund 75% of paid course fee for class withdrawal. Notice must be given at least 14 calendar days before class starts. An Appeal Form must be submitted.

  3. Court Appearance
  4. Bereavement of immediate family (parents, in-laws, siblings, spouse & children)

  • For absenteeism (class missed) with valid reason, Appeal Form must be submitted within 5 working days (from start date of the class) to appeal for make-up class with documentary proof. Otherwise, paid fees will be forfeited.
  • Course fee paid will be forfeited for absenteeism without valid reason.
  • If replacement class or make-up class & date is NOT specified in the Appeal Form, the appeal approval is only valid for 4 months or until 1 Feb, whichever is earlier. After which, the paid fee will be forfeited.
  • If student missed Day 1 of class, they will not be allowed to attend remaining sessions. Their paid fees will be forfeited if there is no reason for missing Day 1.


  • 有合理原因缺席的学员,必须在课程日期的5个工作日申请转班,必须呈交该证明。否则学费将被没收。
  • 无故缺席的学费将被没收。
  • 补课日期如果没定,申请有效日期只限4个月或到2月1日为止。
  • 如果学员在课程的第一天缺席,该学员将无法出席课程的剩余时间。如果第一天无故缺席,学费将被没收。
