Learners will attain knowledge and skills in pasta preparation including making pasta dough, cutting, shaping and cooking fresh pasta as well as a variation of pasta sauces.

This course prepares learners with the abilities to apply the knowledge and skills in preparing pasta dishes which are Fettuccine, Garganelli, Ravioli, Farfalle with a variety of sauces including Tomato Basil, All‘Arrabbiata, Cream Sauce, Garlic and Oil.

During this course, experienced trainers will impart the principles of pasta making including techniques such as selecting and proportioning raw ingredients, seasoning and flavouring of pasta dishes. Learners will also be trained on preparing pasta dough, how to derive the appropriate consistency in pasta sauces, control heat temperature when cooking pasta dishes and determine doneness.

  • Trainees are required to clean up after class.
  • Attendance is required for all programmes (WSQ and non WSQ Courses).
  • There will be written and practical assessments for all WSQ Courses

Please note that our kitchens are designed to accommodate 24 Trainees with 3 Trainees sharing one work-station. With relaxation of Covid measures, we have reverted to conducting classes at full capacity of 24 pax.
