Learners will be competent to work in a food research and development laboratory, a central kitchen, fine dining establishments, small and large-scale manufacturers, or simply in an independent restaurant; to value-add to their
organization by creating the foods of the future.

This programme targets F&B practitioners, such as culinary chefs, who wish to take their culinary skills to the next level by deepening their knowledge of food science that will allow them to create creative, delicious, consistent and
safe food experiences.

  1. Modify Processes for Productivity Improvement
    • This skill describes the ability to establish meaning for the concept of productivity at the workplace and to identify potential opportunities for productivity measurement and improvement at workplace. It also includes selecting and implementing relevant techniques and tools for productivity improvement and managing productivity at workplace.
  2. Interpret Culinary Nutrition
    • This skill describes the ability to understand current nutrition trends and look into its applications in the development of new dishes.
  3. Apply Culinary Trends and Food Regeneration in Asian Cuisines
    • This skill describes the ability to understand the latest culinary trends and techniques and demonstrate its application across from other cuisines to Asian Cuisine.
  4. Innovate with Food Additives
    • This skill describes the ability to understand common food additives and the regulations governing their use. It will also explore the new ingredients that are available in the market. It also includes the application of these ingredients in possible substitution of current ingredients.

Notes:

  1. All applicants are required to pay an admission fee of $50 (non-refundable).
  2. Applicants are required to go through a briefing session before course commencement date.
  3. Trainees are required to purchase a starter kit which includes the uniform and tools set.

  • Minimum 3 years working in Commercial Kitchen with minimum Secondary Education or WPLN Level 5 and above OR Completed WSQ Diploma in Food Services (Culinary Arts).
  • All applications will be evaluated to determine their suitability for admission into our relevant level of programmes. This is subjected to submission of the required supporting documents and the minimum enrolment to start a class.

Note:

  • If the participant fails to meet at least 75% attendance per module and/or fails to sit for an assessment or for any other reason where funding is not approved, company / trainee is required to reimburse ACI the funded portion of the course fees
